Honey Blueberry Jam

As summer winds down we find ourselves saying goodbye to not only sunshine and free time (for some) but also summer produce. I honestly only eat blueberries in the summertime, when they are the most flavorful. However, overzealously I bought two huge bags at my local farmers market and I am not going to eat them all before they go bad. I decided to make some jam that I can use in some other fun recipes. I plan on sharing more of these recipes throughout the week. Make this jam this weekend and follow along with me!

Ingredients

  • 4 cups fresh blueberries
  • 1 cup cane sugar
  • juice of 1 lemon
  • 1/4 cup honey

Method

  1. In a sauce pan on medium heat combine blueberries, sugar, and lemon juice
  2. Stir with a wooden spoon constantly until thickened (30 minutes)
  3. Once the jam has thickened turn off the heat and stir in the honey
  4. Let cool before eating and store in the fridge
