As the end of the summer season looms over us so does the end of summer produce. I love using up fruit in recipes that give them new life and make them last a bit longer than their season.

As we say farewell to peaches I invite you to make my Bourbon Peach Butter- delicious on toasted bread or on a bagel with cream cheese, a fun addition to an Old Fashioned (use in place of simple syrup), and the key ingredient in my Cinnamon Sugar Peach Butter Cookies.
Ingredients
- 5 peaches (peeled and cubed)
- 3 cups light brown sugar
- 3 cinnamon sticks
- 1/4 teaspoon salt
- 1 cup bourbon
- 1/2 cup water
Method
- Combine all of the ingredients in a slow cooker
- Cook on low for 8 hours
- Uncover and cook for 1 hour longer
- Remove the cinnamon sticks
- Blend until smooth
- Let cool and then transfer to an air tight container to store in the fridge
