May in Florida is the final month for picnics in my opinion. Past May the humidity really sets in… as do the mosquitos and the hours to spend outside not in a pool are limited. To really maximize this last month of picnics I crafted a twist on the classic BLT. This sandwich is a crowd pleaser and perfect to make for a picnic outing with friends.
Ingredients:
- 8 pieces cooked bacon
- 2 cups arugula
- 1 tablespoon olive oil
- ½ tablespoon champagne vinegar
- Salt
- Pepper
- 1-2 large tomatoes
- ½ cup mayo
- 2 tablespoons pesto
- 8 ounces goat cheese
- 1 focaccia bread (homemade/storebought)
Method:
- Slice the tomatoes in large thin slices, set aside
- Toss the arugula with the olive oil, champagne vinegar, salt and pepper and then set aside
- Stir together pesto and mayo until combined
- Slice the focaccia in half horizontally
- Spread the pesto mayo over the top and bottom half of the focaccia bread
- Layer the bacon, then tomato slices, then the arugula, crumble the goat cheese and place the top half of the focaccia on top
- Cut the sandwich in half, each half in half, and each piece in half to get 8 sandwiches
