Sourdough Discard Crackers

I hate throwing away sourdough discard and these crackers are my current obsession. I can make these each time I feed my starter and they are the perfect snack! There are endless flavor combinations here but these are my favorite!

Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1 & 1/2 teaspoons paprika
  • 1/4 cup sourdough discard
  • 4 tablespoons of butter (cubed)
  • 1 cup grated swiss cheese
  • 3-4 tablespoons of cold water

Method

  1. Combine all of the ingredients besides the water and pulse in a blender
  2. Add in the water and pulse until dough forms
  3. Wrap the dough in cling wrap and chill in the fridge for 40 minutes
  4. Heat oven to 350 degrees
  5. Once the time is up, remove the dough from the fridge and cut in half
  6. Place 1 half back in the fridge and roll the other half flat (about 1/8-1/4 of an inch thick)
  7. Use a small cookie cutter to cut out cracker shapes and poke holes in the shapes using a toothpick (two-three holes)
  8. Place the cut outs on a sheet pan lined with parchment paper
  9. Bake for 15 minutes
  10. Once the 15 minutes are up turn the oven down to 250 and bake for 5-7 minutes more
  11. Repeat with the remaining dough in the fridge
  12. Let cool before enjoying
