I hate throwing away sourdough discard and these crackers are my current obsession. I can make these each time I feed my starter and they are the perfect snack! There are endless flavor combinations here but these are my favorite!
Ingredients
- 1 cup whole wheat flour
- 1/2 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1 & 1/2 teaspoons paprika
- 1/4 cup sourdough discard
- 4 tablespoons of butter (cubed)
- 1 cup grated swiss cheese
- 3-4 tablespoons of cold water
Method
- Combine all of the ingredients besides the water and pulse in a blender
- Add in the water and pulse until dough forms
- Wrap the dough in cling wrap and chill in the fridge for 40 minutes
- Heat oven to 350 degrees
- Once the time is up, remove the dough from the fridge and cut in half
- Place 1 half back in the fridge and roll the other half flat (about 1/8-1/4 of an inch thick)
- Use a small cookie cutter to cut out cracker shapes and poke holes in the shapes using a toothpick (two-three holes)
- Place the cut outs on a sheet pan lined with parchment paper
- Bake for 15 minutes
- Once the 15 minutes are up turn the oven down to 250 and bake for 5-7 minutes more
- Repeat with the remaining dough in the fridge
- Let cool before enjoying
