Steak can be intimidating for the home cook but it actually is super simple to make. This recipe involves broiling flank steak in the oven for an easy and approachable weeknight meal.
*Note: make sure your oven is clean before using the broil setting and watch the steak closely
Ingredients
- 1.5-2 pounds flank steak
- 4 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 4 garlic cloves minced
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
- 1 tablespoon dijon mustard
- 2 teaspoons oregano
- 1 teaspoon onion powder
- 1/4 teaspoon red pepper flakes
- juice of 1/2 lemon
- 1 bunch of asparagus with ends trimmed
Method
- In a bowl, whisk together three tablespoons of olive oil, balsamic vinegar, garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper, mustard, oregano, and onion powder
- Pour mixture into a freezer bag with the steak and place in the fridge for at least an hour
- When the hour has passed, heat the oven to 450
- On a sheet pan lined with tin foil toss the asparagus with the remaining salt, pepper, olive oil, and the red pepper flakes
- Bake for 5 minutes
- When 5 minutes is up remove the sheet pan from the oven
- Push the asparagus to one side of the pan with a spatula
- Place the steak on the other side of the pan
- Turn the oven on the broil setting (high)
- Place the pan back in the oven and broil for 7 minutes
- When the 7 minutes is up carefully flip the steak and broil for 6 more minutes for medium rare or until the internal temperature is 140 degrees (you can remove the asparagus at the 7 minute mark or keep it with the steak until the end for crispier pieces)
- When the timer is up transfer the steak to a cutting board to rest for 6 minutes
- Toss the asparagus with the lemon juice
- Slice the steak against the grain and serve
*Note: this recipe cooks steak to a medium rare temperature- continue cooking for medium or well done
