In Florida, strawberry season lasts from December thru March. We are usually able to find massive strawberries at the grocery store and I just cannot get enough of them. These Strawberry Lemon Waffles would be so fun to serve for a special Valentine’s Day breakfast! Enjoy!

If you want to make the waffles ahead of time you can do so and then freeze them. Simply make the waffles as normal using your waffle maker, let them cool completely, cut waffle sized squares of parchment paper, and stack your waffles with parchment squares between them in gallon-sized ziplock bags. You can freeze them overnight and bake them in the oven for 10-15 minutes at 350 degrees before your guests arrive!


Ingredients
- 1 1/3 cups whole wheat flour
- 2 tablespoons coconut sugar
- 1/4 teaspoon salt
- 1 cup oat milk
- 2 eggs
- 2 tablespoons honey
- 1 teaspoon baking powder
- 1/2 cup cottage cheese (blended until smooth)
- 1 (8 oz.) bag freeze dried strawberries (crushed)
- zest of 2 lemons
- juice of 1 lemon
- 1 cup quartered strawberries
Method
- Plug in your waffle maker of choice
- In a bowl whisk together flour, salt, baking powder, and crushed freeze dried strawberries
- In a separate bowl whisk the eggs and sugar together until combined
- Whisk in the oat milk and honey until combined
- Whisk in the zest of 1 lemon and juice of 1/2 lemon
- Finally whisk in the cottage cheese
- Add the dry ingredients to the wet and whisk until completely combined
- Ladle the batter onto your heated waffle maker and cook until slightly browned and the batter is not wet in the middle (for my waffle maker it took 3 minutes per waffle but this will vary)
- Transfer the waffles to a warm oven to keep warm or let cool to freeze overnight
- Cut the strawberries into fourths and combine with the zest of the remaining lemon and the lemon juice from the other 1/2 of the lemon
- Serve waffles with the strawberry mixture on top and maple syrup
