This is a meal I make several times a month. It is fast, quick, easy, and healthy. I stock my freezer with salmon and the rest of the ingredients I always have on hand so this is the perfect dish to whip up when we have just returned from a trip or anytime we are super busy.
Ingredients
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 teaspoons lemon pepper
- 2 teaspoons minced garlic
- Salmon (filet or steak for two)
Method
- Preheat the oven to 400 degrees
- Line a sheet pan with tin foil and place the salmon on top
- Mix together oil, lemon juice, garlic, and all of the spices
- Pour over the salmon
- Bake the salmon for 20 minutes or until completely cooked through with a temperature of 145 degrees
