Easy Weeknight Baked Salmon

This is a meal I make several times a month. It is fast, quick, easy, and healthy. I stock my freezer with salmon and the rest of the ingredients I always have on hand so this is the perfect dish to whip up when we have just returned from a trip or anytime we are super busy.

Ingredients

  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons lemon pepper
  • 2 teaspoons minced garlic
  • Salmon (filet or steak for two)

Method

  1. Preheat the oven to 400 degrees
  2. Line a sheet pan with tin foil and place the salmon on top
  3. Mix together oil, lemon juice, garlic, and all of the spices
  4. Pour over the salmon
  5. Bake the salmon for 20 minutes or until completely cooked through with a temperature of 145 degrees
