Ahh the classic combination of peanut butter and banana- timeless but new as a cookie with the addition of cocoa powder for an added richness. These cookies remind me of a banana bread but in sweet treat form.



Ingredients
- 1 1/2 cups sugar
- 2 2/4 cups + 2 tablespoons of flour
- 1 egg
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 2 mashed bananas
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup butter
- 1 cup chocolate chunks
- 1/4 teaspoon salt
- 3 tablespoons peanut butter
Method
- Preheat the oven to 375 degrees
- Whisk together flour, baking powder, baking soda, and salt in a bowl
- Cream together butter and sugar in a stand mixer
- To the stand mixer add the cocoa powder and mix until combined
- To the stand mixer add the egg and vanilla and mix until combined
- To the stand mixer add the mashed banana and the peanut butter and mix until combined
- Gradually mix in the dry ingredients (flour, baking, soda, and salt) to the wet ingredients in the stand mixer
- Gently fold in the chocolate chunks
- Scoop the cookies onto multiple sheet pans lined with parchment paper to bake in batches
- Bake for 8 minutes and then take take the pan out, bang, and rotate and then bake for 3 more minutes
- Repeat until all of the pans of cookies are baked
- Let cool before eating
