When I say this might be the best recipe I have developed so far I mean it.
I’ve had these Salted Caramel Chips sitting in my fridge for a bit with no ideas how to use them. I had about forgotten about them until I turned on an old episode of the Next Great British Baking Show. It was Caramel Week and I was determined to have a sweet caramel treat to munch on while I watched the episode.
I paused the TV and went straight to the kitchen to find my Salted Caramel Chips. Looking around I noticed some slightly brown bananas and my cookie recipe was born.

I did finish watching that episode with the perfect treat in hand.

Ingredients
- 1 1/2 brown sugar
- 2 3/4 cups all purpose flour
- 1 egg
- 1 teaspoon vanilla extract
- 2 mashed bananas
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup room temperature butter
- 1 1/2 cups salted caramel or plain caramel chips
- 1/4 teaspoon salt
Method
- Preheat oven to 375 degrees
- Whisk together flour, baking powder, baking soda, salt
- In a stand mixer with the paddle attachment cream butter and brown sugar together
- Add in vanilla extract and egg and mix until combined
- Add in mashed banana and mix until just combined (there will be chunks)
- Gradually add in dry ingredients
- Once fully mixed fold in caramel chips with a spatula
- Scoop cookies onto baking sheets lined with parchment paper
- Bake for 8 minutes and then take out and bang the pan on your counter tops
- Rotate pan and place back in oven for two more minutes
- Let cool for 7 minutes on the baking sheet and then ten more minutes on a wire cooling rack before eating
