PB&J Blueberry Ice Cream

What better way to celebrate summer than homemade ice cream?

I always found making ice cream to be the best project for summer time! In this recipe I use an ice cream maker from Cuisinart. I’ve linked my model below but any ice cream maker will do. You could also omit the ice cream maker step and freeze the blended mix overnight in your fridge for a similar affect.

This is a healthy-ish recipe that is refreshing to eat and refreshingly easy to make!

Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1 1/2 cup frozen blueberries
  • 1 cup crushed graham crackers plus more for topping

Method

  1. Blend all ingredients (minus graham crackers) in blender
  2. Pour into ice cream machine and mix for 20 minutes
  3. Add graham crackers in during the last 5 minutes of churning
  4. Freeze for two hours before serving
  5. Don’t forget to top with extra graham crackers!
