Sourdough Discard Oatmeal Cookies with White Chocolate & Strawberry

I am a firm believer that sourdough anything is extra delicious- especially these oatmeal cookies! I love to make them with freeze dried strawberries and white chocolate as mix ins but you really could mix anything in. The best part about these cookies is that they use sourdough discard so they are perfect to make if you do not want to waste your discard!

If you do not have sourdough discard but want to make some similar cookies try these.

Ingredients

  • 3/4 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cane sugar
  • 1/4 cup butter (at room temp)
  • 1/3 cup (60g) sourdough discard
  • 1 egg yolk
  • splash of vanilla extract
  • 1/2 of 1 oz. bag freeze dried strawberries
  • 1/2 cup white chocolate chips

Method

Makes 12 cookies
  1. Heat oven to 350 degrees
  2. In a bowl, whisk together flour, oats, salt, and baking soda and then set aside
  3. In a stand mixer fitted with a paddle attachment cream together the butter and cane sugar until smooth
  4. To the stand mixer add the discard, egg yolk, and vanilla extract and mix until smooth
  5. Add in the bowl of dry ingredients and mix until combined
  6. Add the mix ins- white chocolate chips and freeze dried strawberries
  7. Use a cookie scoop to scoop 12 cookies out onto a parchment lined baking sheet (or 2) with space between
  8. Bake for 12-15 minutes
