Rustic Blueberry Brie Bites

If you are looking for a simple appetizer this is a great option. My recipe uses a homemade jam but store bought works just fine here. These bites take just minutes to prepare- enjoy!

Ingredients

  • honey blueberry jam
  • wheel of brie cheese (cut into 12 cubes)
  • 1 store bought puff pastry sheet
  • 1 tablespoon of honey
  • fresh thyme
  • 1 egg yolk beaten
  • 1 teaspoon water

Method

  1. Heat oven to 400 degrees
  2. Line a sheet pan with parchment paper
  3. On a lightly floured surface gently roll the puff pastry until 1/8 inch thick
  4. Using a pizza roller cut the puff pastry into 12 rectangles
  5. Spread 1/2 tablespoon of jam on each pastry rectangle leaving a large border
  6. Top each rectangle with a cube of brie
  7. Gently fold the corners of each rectangle into the middle until you have a slightly uneven diamond shape
  8. Carefully place each bite on the parchment lined baking sheet
  9. Beat egg yolk with water in a small cup
  10. Brush the beaten egg yolk mixture over each bite
  11. Bake for 22 minutes
    • Some cheese may escape when baking, you can remove the bites from the parchment paper and trim off the escaped cheese before plating
  12. Drizzle with honey and top with thyme leaves
