In the summertime I love to take out my ice cream maker and experiment with different ice cream flavors. One of my favorite flavors is coffee so I figured I’d create my own version. My coffee ganache is an important component in many of my recipes including my Coconut Mocha Cupcakes and my Peppermint Mocha Cupcakes . It really shines in this simple ice cream recipe as well!
Ingredients
- 4 cups of half and half
- 1 (14oz) can of sweetened condensed milk
- 1/2 cup cocoa powder
- 1/4 cup coffee
- 3 tablespoons of instant espresso
- 1 cup of chocolate chips
Method
- Make the ganache-
- Microwave 1 cup of heavy cream with 1/2 cup of chocolate chips for three minutes
- Remove from the microwave and whisk in an additional 1/2 cup of chocolate chips
- Once combined whisk in the instant espresso powder until completely combined
- Let set for 30 minutes
- Make the ice cream-
- Blend together the remaining heavy cream, sweetened condensed milk, cocoa powder, and coffee
- Blend in three tablespoons of the ganache
- Place in ice cream machine and churn for 20 minutes
- Add in 1/3 of the remaining ganache and mix for 5 minutes more
- Transfer to an airtight container in large scoops while drizzling in the remaining ganache
- Place in freezer for at least 3 hours before serving
