If you are looking for a light, simple, yet still impressive meal this is the one for you! It is easy to prepare, very flavorful, and full of healthy ingredients. This recipe will be on repeat for me this summer!
Ingredients
- 3-4 zucchinis (small-medium size)
- 1 pound ground beef or lamb
- 1 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 3 garlic cloves, minced
- 1/2 block feta, sliced or crumbled
- 3/4 cup breadcrumbs
- olive oil
- 1 cup plain greek yogurt
- 1 kirby cucumber
- juice of 1 lemon
- 1/4 cup fresh dill
- 1 pint cherry tomatoes halved
Method
- Heat oven to 375 degrees
- Place a pan on medium heat on the stove, drizzle olive oil on the pan and add in the tomatoes, let the tomatoes heat until they begin to burst
- Drizzle olive oil in a baking dish (8 x 12 inch) and pour the tomatoes on top

- Half the zucchinis and use a spoon to scoop out the seeds
- Place each zucchini in the baking dish on top of the tomatoes skin side down, drizzle olive oil on top and season with 1/4 teaspoon salt and pepper

- In the pan on the stove heat the meat for about 2 minutes, add 1/2 teaspoon salt, 1/4 teaspoon pepper, the basil, red pepper flakes, 2 minced garlic cloves and combine
- Cook until the meat just starts to brown
- Scoop the meat into each zucchini boat

- Top the zucchini boats with the feta and sprinkle the breadcrumbs over top

- Bake for 30 minutes
- While the zucchini boats bake make the tzatziki
- Combine lemon juice and Greek yogurt in a bowl, grate in the cucumber and add in the remaining garlic, salt, and dill, combine completely and then drizzle the top with oil

- Serve the zucchini boats with tzatziki on top
