Cheesy Balsamic Bacon Potato Stacks

The words cheesy and potato together make my mouth water. Potatoes are some of my favorite ingredients to work with because they are truly so versatile. There are so many ways to prepare them. These potato stacks make for an impressive side dish or fun appetizer and just might be my favorite way to eat a potato at the moment.

Ingredients

  • 2 russet potatoes (peeled)
  • 1/3 cup melted butter
  • 4oz crumbled goat or blue cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 green onions sliced
  • 2 strips of bacon cut into small pieces
  • balsamic glaze

Method

  1. Heat oven to 375 degrees and grease a muffin pan
  2. Carefully slice potatoes into thin rounds using a mandolin
  3. Toss potatoes in a bowl with the salt, pepper, butter, and cheese until covered
  4. Stack potato slices into the greased muffin tins pressing down once you get to the top
  5. Pour on any remaining cheesy butter mixture
  6. Cover the muffin pan with aluminum foil
  7. Bake for 30 minutes
  8. While the potato stacks bake, heat a pan on medium heat on the stove
  9. Add the bacon to the pan when hot and cook until crispy
  10. Set the bacon aside
  11. Once 30 minutes is up, uncover the potatoes and bake uncovered for 13 minutes
  12. When finished baking, remove from the oven and wait 5 minutes before carefully using a utensil to remove the potato stacks from the muffin tins
  13. Drizzle each stack with balsamic glaze and top with bacon and green onions before serving
