French Onion Tart

Recently, my husband and I went to our favorite French restaurant on a date night. Determined to keep it affordable we sat at the bar and each ordered the French Onion Soup. I don’t always crave soup but I do think the flavors of a classic French Onion Soup are especially cozy. As I savored my soup I was inspired to create this tart and think it would be a great appetizer for any winter hosting.

Ingredients

  • 3 tablespoons of butter
  • 2 onions
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3/4 teaspoon pepper
  • three sprigs of fresh thyme
  • 2 onions (sliced)
  • 1 puff pastry sheet
  • 1/4 cup white wine
  • 1 1/2 cups shredded gruyere cheese
  • 3 tablespoons chevrè goat cheese
  • 1 tablespoon olive oil

Method

  1. Heat an enamel pan or pot on medium heat on the stove
  2. Melt the butter in the pan
  3. Once the butter is melted add the onion, sugar, salt, and 1/2 teaspoon pepper
  4. Cook the onions for 35 minutes until soft and caramel in color, stirring occasionally to prevent them from burning (put on a good playlist and pour a glass of wine)
  5. Once the onions have begun to take on a caramel color pour in the wine and cook for 10 more minutes
  6. Remove from the heat
  7. Heat oven to 400 degrees
  8. On a sheet pan covered in parchment paper roll out the puff pastry sheet and use a knife to lightly create a 1/4 inch border
  9. Using a fork poke holes all over the pastry within the border
  10. Spread the goat cheese over the pastry leaving the border plain
  11. Spread the onions evenly over the pastry leaving the border plain
  12. Sprinkle the cheese all over the top
  13. Top with the remaining pepper and thyme leaves
  14. Brush olive oil on the border
  15. Bake for 25-30 minutes
