Recently, my husband and I went to our favorite French restaurant on a date night. Determined to keep it affordable we sat at the bar and each ordered the French Onion Soup. I don’t always crave soup but I do think the flavors of a classic French Onion Soup are especially cozy. As I savored my soup I was inspired to create this tart and think it would be a great appetizer for any winter hosting.
Ingredients
- 3 tablespoons of butter
- 2 onions
- 1 teaspoon salt
- 1 teaspoon sugar
- 3/4 teaspoon pepper
- three sprigs of fresh thyme
- 2 onions (sliced)
- 1 puff pastry sheet
- 1/4 cup white wine
- 1 1/2 cups shredded gruyere cheese
- 3 tablespoons chevrè goat cheese
- 1 tablespoon olive oil
Method
- Heat an enamel pan or pot on medium heat on the stove
- Melt the butter in the pan
- Once the butter is melted add the onion, sugar, salt, and 1/2 teaspoon pepper
- Cook the onions for 35 minutes until soft and caramel in color, stirring occasionally to prevent them from burning (put on a good playlist and pour a glass of wine)
- Once the onions have begun to take on a caramel color pour in the wine and cook for 10 more minutes
- Remove from the heat
- Heat oven to 400 degrees
- On a sheet pan covered in parchment paper roll out the puff pastry sheet and use a knife to lightly create a 1/4 inch border
- Using a fork poke holes all over the pastry within the border
- Spread the goat cheese over the pastry leaving the border plain
- Spread the onions evenly over the pastry leaving the border plain
- Sprinkle the cheese all over the top
- Top with the remaining pepper and thyme leaves
- Brush olive oil on the border
- Bake for 25-30 minutes
