Pistachio Orange Sugar Cookies with Chocolate Orange Drizzle

I love adding pistachios to bakes or dishes. They add a unique salty flavor that combines with many ingredients very well. In these cookies the pistachio orange combination is absolutely phenomenal. You have to make them!

Makes 48.

Ingredients

  • 1 cup of butter
  • Zest of 1 orange
  • 1 1/2 cups of cane sugar
  • 1 egg
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon almond extract
  • 1/2 cup ground lightly salted pistachios plus more for topping
  • 1 cup chocolate chips
  • 3 tablespoons coconut oil
  • Juice from 1/2 orange

Method

  1. Make the cookie dough-
    • In a bowl pinch the orange zest into the sugar until combined
    • In a stand mixer fitted with the paddle attachment beat together the butter and sugar until combined
    • Add the egg and almond extract and mix until combined
    • In a separate bowl whisk together the flour, 1/2 cup ground pistachios, and baking soda
    • Slowly add the flour mixture into the stand mixer and mix until dough forms
    • Wrap in plastic wrap and refrigerate for at least 45 minutes or up to overnight
  2. Bake-
    • Heat oven to 350
    • Roll the cookie dough out in batches
    • Use your choice of cookie cutter to cut out the cookies
    • Bake on a sheet pan lined with parchment paper for 11 minutes or until the edges start to brown
    • Let cool on a wire rack
  3. Finish-
    • In a bowl mix the coconut oil with the chocolate chips
    • Microwave in 30 second intervals and mix until it becomes a drizzle consistency
    • Mix in the orange juice
    • Drizzle chocolate over the cookies or dip the cookies in the chocolate
    • Top cookies with more ground pistachios if desired
