Fall Crockpot Roast

I love cooking a meal in my crockpot. It makes the house smell amazing all day and is so convenient for busy seasons. The preparation happens in the morning which frees me in the evening to relax and serve a wonderful meal. This specific recipe is super easy and gives you a whole meal (complete with sides) straight from the crockpot enabling easy cleanup!

Ingredients

  • olive oil
  • salt and pepper
  • 3 garlic cloves (minced)
  • 1 yellow onion (cut into eighths)
  • 1 tablespoon maple syrup
  • 1 1/2 cups apple cider
  • 1 cup beef broth
  • 1 tablespoon dijon mustard
  • 2 1/2-3 lbs beef chuck
  • 3 sweet potatoes (peeled)
  • 1 bushel of brussel sprouts (halved)
  • 5 thyme sprigs

Method

  1. Season beef chuck with salt and pepper on both sides
  2. Heat a skillet on medium heat on the stove and sear the beef chuck (3 minutes per side)
  3. Place the beef chuck in the slow cooker
  4. Nestle the onion around the beef and lay the sweet potatoes over top
  5. In a separate bowl whisk together the garlic, maple syrup, apple cider, beef broth, and mustard
  6. Pour the mixture over the crockpot contents
  7. Top with fresh thyme
  8. Place the lid on and cook on low for 7-8 hours
  9. In the last 1.5- 2 hours of cooking add in the brussel sprouts and stir gently
