Spicy Sheet Pan Tacos

The best tacos are loaded with different elements and flavor. However, no one wants to dirty a bunch of different pans on a weeknight. Insert these Spicy Sheet Pan Tacos. They take just one sheet pan but feature poblano peppers, sweet potatoes, and chicken! You will love these!

Ingredients

  • 1 pound chicken breast (cubed)
  • 1 poblano pepper (roughly chopped)
  • 1-2 sweet potatoes (peeled and cut into small cubes)
  • 2-3 chipotle peppers in adobo and the sauce
  • olive oil
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon pepper
  • 3/4 teaspoon salt
  • 1 teaspoon cumin

Method

  1. Heat oven to 400 degrees
  2. Line a sheet pan with parchment paper
  3. Toss sweet potato cubes in a drizzle of olive oil and 1/4 teaspoon salt and 1/4 teaspoon pepper on sheet pan
  4. Bake for 10 minutes
  5. While baking prepare chicken by tossing in chipotle powder, cumin, oregano, and remaining pepper, and salt
  6. Drizzle poblano pepper with olive oil
  7. Chop two to three chipotle peppers in adobo sauce and reserve the sauce from the can
  8. Add chicken and poblano pepper to sheet pan
  9. Toss the veggies and chicken with the chipotle peppers and adobo sauce
  10. Return the sheet pan to the oven
  11. Bake for 20-25 minutes or until chicken is cooked through and sweet potatoes are soft
  12. Serve veggies and chicken in tortillas with cheese and plain greek yogurt
