If you’ve followed me for a bit then you are most likely aware that I have a husband who loves bourbon. In fact, his love for bourbon has worn off on me. I even drink it neat now. Type bourbon into the search bar and you’ll find a few yummy recipes that involve bourbon. This one is simple and the perfect dessert to serve up this fall. Your guests will be impressed but it involves minimal effort on your part.
Ingredients
- 1 cup almond flour
- 1/4 cup chopped walnuts
- 1/4 cup coconut sugar
- 1/2 cup oats
- 1/4 cup butter (cubed)
- 1/4 cup cornstarch
- 3-4 plums (sliced)
- 1/2 cup corn sugar
- 1/2 cup water
- 2-3 tablespoons bourbon
Method
- Make the bourbon simple syrup-
- In a sauce pan, on the stove, stir cane sugar and water on high heat until it starts to boil
- Reduce the heat to low and let simmer for 2 minutes
- Remove sauce pan from the heat and add bourbon
- Return the sauce pan to the heat and cook on medium for 3 minutes
- Pour simple syrup into a heat proof bowl and let cool
- Make the crumble-
- Heat oven to 375 degrees
- Mix plum slices with 1/2 cup bourbon simple syrup and let sit (you will have simple syrup remaining)
- Meanwhile combine the almond flour, coconut sugar, walnuts, and oats in a bowl
- Use your fingers to pinch in the butter until a crumble topping forms
- Use a slotted spoon to transfer the plums to another bowl
- Mix the plums with the cornstarch
- Finally pour the plum mixture into a greased pie dish
- Top with the crumble topping
- Bake for 35 minutes, then turn oven off and let sit in warm oven for 5 minutes
- Drizzle the remaining simple syrup over the top before serving
