Funky Prosciutto Pear Bites

When the weekend rolls around I usually get really excited to go out for happy hour on Friday. This week, however, it has been raining non stop. When it rains like this the last thing I want to do is get in my car and drive somewhere. So, I brought happy hour home. These Prosciutto Pear Bites are a little bit different thanks to the gorgonzola cheese and truffle honey. The bonus is they take about 20 minutes to prepare.

Ingredients

  • 2 pears
  • prosciutto strips
  • 1 wedge of gorgonzola cheese
  • 1 tablespoon truffle honey

Method

  1. Heat oven to 375 and line a sheet pan with parchment paper
  2. Slice pears about 1 inch thick
  3. Cut cheese into slices equal or smaller in thickness to the pears
  4. Layer 1 piece of cheese on top of a pear slice and wrap in one prosciutto strip
  5. Repeat with all of the pear slices
  6. Line the wrapped pears up on the sheet pan with a couple inches between them (make sure the cheese is on top not facing the pan)
  7. Bake for 10 minutes
  8. When 10 minutes is up remove them from the oven (they will have leaked and that is okay)
  9. Let cool for 5 minutes before plating
