Grated Tomato Turkey Meatballs

These meatballs are super easy to make and are perfect for a weeknight meal. They can be served with a variety of sides (quinoa, pasta, rice, risotto, etc.). I love to serve them up with my Roasted Red Pepper Risotto .

Ingredients

  • 1 pound ground turkey
  • 1/2 cup Italian breadcrumbs
  • 1 roma tomato
  • 1/4 white onion
  • 2 minced garlic cloves
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon oregano
  • 1 egg
  • 1/4 block of feta
  • olive oil spray

Method

  1. Heat oven to 375 and line a sheet pan with tin foil and spray with olive oil
  2. Using a cheese grater, grate the tomato and onion into a large bowl
  3. Add the garlic, ground turkey, spices, breadcrumbs, and egg
  4. Mix until completely combined
  5. Crumble the feta into the mixture and mix until dispersed
  6. Spray your hands with olive oil spray and roll the mixture into equal balls placing on the sheet pan with some space between each one
  7. Spray the tops of the meatballs with more olive oil spray
  8. Bake in the center rack of the oven for 10 minutes
  9. Remove the tray from the oven and carefully flip the meatballs over
  10. Bake for 10 more minutes or until cooked through
