I recently became a bourbon lover- a trip to Louisville, Kentucky will do that to you. I have been enjoying it neat… Who would’ve thunk? Another way I enjoy my bourbon is in baked goods… When it bakes off in the oven you cannot taste it but it does a wonderful job enhancing some of the caramel notes you get from brown sugar. These cookies are delicious! You have to try them!
Ingredients
- 1 cup butter
- 1 cup light brown cane sugar
- 1/2 cups coconut sugar
- 1 egg
- 3 tablespoons bourbon
- 2 mashed bananas
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 3/4 cups flour
- 1/4 teaspoon salt
- 1 cup dark chocolate morsels
Method
- Preheat oven to 375 degrees
- Whisk together flour, baking powder, baking soda, salt
- In a stand mixer with the paddle attachment cream butter on low-medium speed
- Once the butter is lighter in color add in the sugars and mix until completely combined
- Add in the egg and mix until combined
- Add the bourbon and mix until combined
- Add in mashed banana and mix until just combined (there will be chunks)
- Gradually add in dry ingredients
- Once fully mixed, fold in the chocolate with a spatula
- Scoop cookies onto baking sheets lined with parchment paper
- Bake for 10 minutes and then take out and use the bottom of a cup to flatten the tops of the cookies
- Bake for 3 more minutes
- Let cool for 5 minutes on the baking sheet and then ten more minutes on a wire cooling rack before eating
