Coconut Granola

Making granola at home is super easy and is so much cheaper than getting it from the store. I love to make some using leftover pantry items- like this recipe featuring coconut!

Ingredients

  • 2 cups of oats
  • 1/2 cup chopped walnuts
  • 1/2 cup sliced almonds
  • 1/4 cup sunflower seeds
  • 3-4 tablespoons chia seeds
  • 1 1/2 cup unsweetened coconut
  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 2 tablespoons brown coconut sugar
  • 2 tablespoons sunflower oil

Method

  1. Heat oven to 350
  2. In a large bowl- combine the oats, almonds, walnuts, sunflower seeds, chia seeds, and coconut
  3. Mix in the sugar, coconut oil, sunflower oil, and maple syrup
  4. Pour the mixture on a baking sheet lined with parchment paper and spread thin
  5. Bake for 12 minutes
  6. Take out of the oven and mix around
  7. Bake for 5 minutes more
  8. Let cool completely
