I love an easy meal that tastes more complex than it actually is to cook. This grouper recipe is so simple it only takes one pan but the browned butter adds a depth of flavor that takes it up a notch.
Ingredients
- 2 grouper filets
- 1/2 zucchini cut into thin rounds
- 1/2 yellow squash cut into thin rounds
- 1/4 cup butter
- 3-4 garlic cloves minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon oregano
- 2 tablespoons lemon infused olive oil (or plain olive oil and juice from 1 lemon)
Method
- Heat a large pan on the stove on medium heat
- Add the butter and let melt until brown in color and you can smell a nutty aroma (about 5 minutes)
- Meanwhile season both sides of the grouper filets with 1/4 teaspoon salt, 1/4 teaspoon pepper, and oregano
- Add garlic to the pan and let cook until fragrant (about 1 minute)
- Add the seasoned grouper to the buttery pan and sear both sides 3-4 minutes until cooked through
- Remove the grouper from the pan
- Without wiping the pan add the olive oil and use a spatula to scrape the brown bits on the bottom of the pan
- Add the zucchini and squash to the pan
- After 2 minutes add the remaining salt and pepper to the vegetables and then cook for 3 more minutes or until soft
- Add the grouper back to the pan and let warm 1 minute
- Serve the grouper overtop of the zucchini and yellow squash
