This simple, healthy meal is a dinner we come back to often and it never gets old!
Ingredients
- 4 salmon filets
- zest of 1 lemon
- 2 zucchinis cut into thin slices and then halved
- 1 can of chickpeas drained, rinsed, and patted dry
- juice of 1/2 lemon
- 4 lemon slices
- 1/4 cup plus two tablespoons olive oil
- 1 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
- 2 garlic cloves minced
- 2 teaspoons paprika
Method
- Heat the oven to 400 degrees
- On a sheet pan lined with parchment paper toss the chickpeas with lemon zest, oregano, 1/4 teaspoon pepper, 1/2 teaspoon salt, 1 tablespoon olive oil
- Nestle the salmon filets around the chickpeas
- In a measuring cup combine the 1/4 cup olive oil, garlic, paprika, 1/2 teaspoon salt, 1/4 teaspoon pepper, lemon juice and pour equal parts of the mixture over each salmon filet
- Top each filet with a lemon slice
- Bake for 10 minutes
- When 10 minutes is up shift the salmon to one side of the pan and add the zucchini
- Toss the zucchini with the remaining salt, pepper, and olive oil
- Bake for 8 to 10 minutes more or until the salmon is fully cooked
