A few weeks back I randomly received a giant box of Cap’N Crunch cereal with my grocery order and decided to make dessert with it because when life gives you Cap’N Crunch…. make cookies. Isn’t that the saying?
The cookies are sweet and would be fun with any sweet cereal mixed in!
Ingredients
- 1 cup light brown sugar
- 2 cups flour
- 1 egg
- 1/4 teaspoon salt
- 1 teaspoon vanilla bean paste
- 1 cup butter at room temperature
- 1/2 teaspoon baking powder
- 1 /4 cup crushed cap’n crunch cereal
- 1/2 cup cap’n crunch cereal plus a handful more
- 1/2 cup white chocolate chips
Method
- Heat oven to 375 degrees
- In a bowl whisk together the flour, baking powder, baking soda, and salt and then set aside
- In a stand mixer fitted with a paddle attachment cream the butter until smooth and then add in the sugar and mix until combined
- Add in the egg and vanilla bean paste and mix until combined
- Slowly, and in parts, add in the dry ingredients letting each part mix in before adding more
- Mix in the crushed cap’n crunch
- Use a spatula to mix in the cap’n crunch cereal pieces and the chocolate chips
- Scoop out the cookies on a parchment lined baking sheet and bake in batches
- Bake each batch for 10 minutes, take out the pan and bang it, carefully add a few additional cereal pieces to each cookie and then bake for 2-3 minutes more
- Let cool before enjoying
