Valentine Breakfast Cake

Make this sweet, guilt free cake and serve it for breakfast to your favorite Valentine this year! Bonus- this cake is even better the next day after baking!

Ingredients

  • 1 cup of applesauce
  • 3/4 cup honey
  • 2 eggs
  • 2/3 cup greek yogurt
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon baking soda
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 1 2/3 cups whole wheat flour
  • 4 ounces cream cheese
  • 1/2 cup powdered sugar alternative (I use Swerve)
  • 1/2 teaspoon vanilla bean paste
  • 1/4 cup oat milk
  • red food coloring

Method

  1. Heat oven to 350 degrees
  2. In a bowl combine the cocoa powder, flour, baking soda, salt
  3. In a stand mixer fitted with the whisk combine the honey and applesauce
  4. Whisk in the eggs, greek yogurt, and apple cider vinegar
  5. Add in 1/4 of the flour mixture and whisk until combined, repeat until the dry ingredients have been incorporated completely
  6. Add as much red food coloring as desired
  7. Pour batter into a loaf pan and bake for 45 minutes
  8. While the cake cools whisk the cream cheese, oat milk, vanilla bean paste, a pinch of salt, and the powdered sugar alternative together until an icing forms (you may want to add the powdered sugar in stages)
  9. Add a pinch of red food coloring to make the icing pink if desired
  10. Once the cake has cooled, spread the icing on top using a spatula
  11. Top with sprinkles if desired
  12. Refrigerate the cake for 20 minutes after icing to allow the icing to set
