Crock-Pot Garlic Ginger Short-Ribs

If you are tired of cooking chicken but intimidated by beef this is the recipe for you! It is super simple- basically you just have to prep the ingredients and dump them in the slow cooker! Doesn’t get better than that! If you do make these you have to pair them with my Crispy Brussel Sprouts!

Ingredients

  • 1.5-2 pounds beef short ribs
  • salt
  • pepper
  • 2 inches of ginger (minced)
  • 4 cloves of garlic (minced)
  • juice of one lemon
  • 2 tablespoons olive oil
  • 1 cup soy sauce
  • 1/4 cup honey
  • 1/2 cup rice vinegar

Method

  1. Whisk together the ginger, garlic, soy sauce, rice vinegar, honey, and lemon juice until incorporated and then set aside
  2. Season the short-ribs liberally with salt and pepper on all sides
  3. Heat the olive oil in a cast iron skillet on medium heat
  4. Sear the short ribs for no more than 3 minutes a side
  5. Place the short ribs in a slow cooker and pour the soy sauce mixture over top
  6. Cook on low for 7-8 hours
  7. Serve over rice and top with sesame seeds
