This cheese dip is made by blending together feta and goat cheese with spices, topping the mixture with tomatoes, and roasting it until it is bubbly and delicious. This is an appetizer of comfort that will surely please your guests and yourself.


Ingredients
- 2 blocks feta cheese
- 8 ounces goat cheese
- 1/2 cup olive oil
- 1 clove of garlic
- 1/2 teaspoon smoked red pepper flakes
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2-3 heirloom tomatoes (or tomatoes of choice) cut into thin slices
- 1/2 teaspoon sesame seeds
- a drizzle of balsamic glaze
Method
- Heat the oven to 450
- In a blender combine the cheeses, olive oil, 1/4 teaspoon smoked red pepper flakes, 1/2 teaspoon rosemary, salt, pepper, and the garlic clove until smooth
- Spread the cheese mixture into a glass, decorative pie or tart pan
- Arrange the tomato slices in a pattern on top
- Bake for 15 minutes
- Remove from the oven and let sit for 8-10 minutes (this will allow the oil to sink from the top of the cheese)
- Drizzle balsamic glaze and sprinkle sesame seeds over the top before serving with crusty bread
