One Bowl Orange and Cranberry Cookies

To me, baking is a fun pastime. However, when I am making a meal that includes a lot of pieces I sometimes need a simple dessert. These cookies are perfect for Christmas and made in one bowl! Win, win!

Ingredients

  • 2 2/3 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • 3/4 cup honey
  • zest from one orange
  • juice from 1/2 of an orange
  • 1/2 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cub white chocolate chips

Method

  1. Heat oven to 350 degrees
  2. In a bowl, whisk together melted butter and honey until combined and the honey no longer sticks to the bowl
  3. Whisk in the orange juice and zest
  4. Once combined whisk in the egg and vanilla extract
  5. Plop the flour, baking soda, baking powder, and salt on top
  6. Gentle combine the dry ingredients without touching the wet with a spatula
  7. Once mixed as much as possible use the spatula to combine the wet with the dry
  8. Mix in the chocolate chips and dried cranberries
  9. Scoop onto a sheet pan
  10. Bake in batches for 11-14 minutes
