If you are experiencing a temperature drop this week you have to make this Chocolate Peppermint Loaf Cake! It is sure to help you get into a festive mood!
Ingredients
- 1 cup & 2 tablespoons brown coconut sugar
- 3/4 cup greek yogurt
- 1/4 teaspoon salt
- 2 eggs
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 cup applesauce
- 1/2 teaspoon peppermint extract
- 1 1/4 cups whole wheat flour
- 1/2 cup cocoa powder
- 1/3 cup mini chocolate chips
- 3 crushed mini candy canes
- 1/2 cup powdered sugar replacement (plus more as needed)
- 2 tablespoons oat milk
Method
- Heat oven to 350 degrees
- In a bowl whisk together the cocoa powder, flour, salt, baking soda, and baking powder and then set aside
- In a stand mixer fitted with a whisk attachment whisk the coconute sugar with the eggs until complete combined
- Add in the greek yogurt and whisk until combined
- Add in the peppermint extract and applesauce and whisk until completly smooth
- Pour the dry ingredients in in batches, whisking until no flour specks remain before adding in more
- Remove from the stand mixer and fold the chocolate chips in with a spatula
- Pour into a greased loaf tin
- Bake for 35 minutes uncovered and then remove from the oven, cover with tin foil and bake for ten minutes more
- While the cake cools whisk together the oat milk and powdered sugar replacement until the mixture thickens (mix in more powdered sugar replacement as needed)
- Pour the glaze over the top of the cake and top with crushed candy canes
- Transfer to a serving plate and enjoy
