Chocolate Peppermint Loaf Cake

Ingredients

  • 1 cup & 2 tablespoons brown coconut sugar
  • 3/4 cup greek yogurt
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 cup applesauce
  • 1/2 teaspoon peppermint extract
  • 1 1/4 cups whole wheat flour
  • 1/2 cup cocoa powder
  • 1/3 cup mini chocolate chips
  • 3 crushed mini candy canes
  • 1/2 cup powdered sugar replacement (plus more as needed)
  • 2 tablespoons oat milk

Method

  1. Heat oven to 350 degrees
  2. In a bowl whisk together the cocoa powder, flour, salt, baking soda, and baking powder and then set aside
  3. In a stand mixer fitted with a whisk attachment whisk the coconute sugar with the eggs until complete combined
  4. Add in the greek yogurt and whisk until combined
  5. Add in the peppermint extract and applesauce and whisk until completly smooth
  6. Pour the dry ingredients in in batches, whisking until no flour specks remain before adding in more
  7. Remove from the stand mixer and fold the chocolate chips in with a spatula
  8. Pour into a greased loaf tin
  9. Bake for 35 minutes uncovered and then remove from the oven, cover with tin foil and bake for ten minutes more
  10. While the cake cools whisk together the oat milk and powdered sugar replacement until the mixture thickens (mix in more powdered sugar replacement as needed)
  11. Pour the glaze over the top of the cake and top with crushed candy canes
  12. Transfer to a serving plate and enjoy
