This recipe features ingredients you probably have sitting around at home making it perfect to whip up when you don’t feel like going out or venturing to the grocery store. I like to top mine with a simple, lemony arugula salad.


Ingredients
- 1 box of pasta of your choice
- 2 shallots diced
- 2 garlic cloves minced
- 1 8.5 oz jar sun-dried tomatoes
- 1 tablespoon tomato paste
- 1/4 cup vodka
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup heavy cream
- 1 tablespoon butter
- 1/2 cup ricotta cheese
Method
- Cook the pasta according to the box directions
- Pour the oil from the sun-dried tomato jar into a pan on medium heat
- Add the shallots and cook until softened (about 3 minutes)
- Meanwhile blend the sun-dried tomatoes in a blender until semi smooth
- Add the garlic to the pan of shallots and heat for one minute more
- Pour the blended sun-dried tomatoes into the pan and heat for three minutes
- Add in the tomato paste and cook until it begins to darken
- Season with the red pepper flakes, salt, and pepper
- Pour in the vodka and let the sauce simmer for 3 minutes
- Pour in the heavy cream and mix until combined
- Remove from the heat and toss in the pasta
- Toss in the butter and mix until melted
- Serve the pasta tossed with scoops of ricotta
