Banana Pudding Cupcakes

My husband loves Banana Pudding and this year for his birthday I was inspired to make a cupcake version. These are a fun nostalgic treat to serve up at a family celebration or just to add a little sunshine to your week!

Ingredients

  • 2 eggs
  • 1 cup of granulated sugar
  • 1/2 cup of butter at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup milk
  • 1 box of Vanilla Wafer cookies
  • 3 snack sizes of vanilla puddings
  • 1 tub sugar free Cool Whip
  • 2 mashed bananas
  • 2/3 cup powdered sugar
  • 1 1/4 cups marshmallow fluff

Method

  1. Heat oven to 350 degrees
  2. Heat milk in a small pot on stove on medium to low heat until it starts to steam (watch carefully) when it steams remove from the heat and drop a handful of Vanilla Wafers in to steep for 30 minutes
  3. When 30 minutes have passed push the milk and wafer mixture through a strainer into a small bowl until the wafers have basically dissolved into the milk
  4. In a separate bowl mix together flour, baking soda, and a pinch of salt
  5. In a stand mixer fitted with a paddle attachment cream together the granulated sugar and butter
  6. Once combined add 1 teaspoon of vanilla extract and the eggs
  7. Once combined alternate mixing in the milk and the dry ingredients until the batter forms
  8. Pour the batter into a muffin tin lined with cupcake liners
  9. Bake for 17-20 minutes and then let cool for 20 minutes
  10. While the cupcakes cool make the frosting- in a stand mixer fitted with a whisk attachement whisk the tub of cool whip and powdered sugar until combined, afterwards mix in the marshmallow fluff until everything is completely mixed together
  11. In a small bowl make the filling by mixing together the mashed bananas and the vanilla pudding cups
  12. Once the cupcakes are cool use a piping nozzle to stamp a hole in the center of each cupcake
  13. Pipe the pudding mixture into the hole of each cupcake until they start to overflow on top
  14. Top each cupcake with the cool whip frosting and a vanilla wafer for decoration
  15. Store cupcakes in the refrigerator until they are ready to serve
