My husband loves Banana Pudding and this year for his birthday I was inspired to make a cupcake version. These are a fun nostalgic treat to serve up at a family celebration or just to add a little sunshine to your week!

Ingredients
- 2 eggs
- 1 cup of granulated sugar
- 1/2 cup of butter at room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- Pinch of salt
- 1/2 cup milk
- 1 box of Vanilla Wafer cookies
- 3 snack sizes of vanilla puddings
- 1 tub sugar free Cool Whip
- 2 mashed bananas
- 2/3 cup powdered sugar
- 1 1/4 cups marshmallow fluff
Method
- Heat oven to 350 degrees
- Heat milk in a small pot on stove on medium to low heat until it starts to steam (watch carefully) when it steams remove from the heat and drop a handful of Vanilla Wafers in to steep for 30 minutes
- When 30 minutes have passed push the milk and wafer mixture through a strainer into a small bowl until the wafers have basically dissolved into the milk
- In a separate bowl mix together flour, baking soda, and a pinch of salt
- In a stand mixer fitted with a paddle attachment cream together the granulated sugar and butter
- Once combined add 1 teaspoon of vanilla extract and the eggs
- Once combined alternate mixing in the milk and the dry ingredients until the batter forms
- Pour the batter into a muffin tin lined with cupcake liners
- Bake for 17-20 minutes and then let cool for 20 minutes
- While the cupcakes cool make the frosting- in a stand mixer fitted with a whisk attachement whisk the tub of cool whip and powdered sugar until combined, afterwards mix in the marshmallow fluff until everything is completely mixed together
- In a small bowl make the filling by mixing together the mashed bananas and the vanilla pudding cups
- Once the cupcakes are cool use a piping nozzle to stamp a hole in the center of each cupcake
- Pipe the pudding mixture into the hole of each cupcake until they start to overflow on top
- Top each cupcake with the cool whip frosting and a vanilla wafer for decoration
- Store cupcakes in the refrigerator until they are ready to serve
