My favorite music to play when I’m baking is Bridgerton’s instrumental playlist. Anyone else?
It’s the perfect background music for a relaxing day spent baking in the kitchen.
This recipe is full of healthier swaps so the cake can be enjoyed for a breakfast treat as well!

Ingredients
- 1 cup plus two tablespoons of coconut sugar
- 2 eggs
- 3/4 cup Greek Yogurt
- 1 packet of Chai Tea
- 1 teaspoon maple sugar (optional)
- 1 teaspoon chai spice https://thelovelltable.com/2023/08/16/easy-chai-spice-blend/
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 cup applesauce
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tablespoon maple syrup plus 1 teaspoon
- 2/3 cup sugar free confectioners sugar (I used Nature’s Besti Sugar Replacement)
- 1 tablespoon melted coconut oil
- 2 tablespoons oat milk
Method
- Heat oven to 350 degrees
- In a bowl mix together the flour, chai spice, maple sugar (if using), salt, baking powder, baking soda
- Empty the chai tea packet into the dry ingredients and mix
- In the bowl of a stand mixer fitted with a whisk attachment whisk together the coconut sugar and eggs until combined
- Whisk in the greek yogurt, vanilla extract, and 1 tablespoon of maple syrup until combined
- Whisk in the applesauce
- Gradually add in the dry ingredients letting each bit mix in completely before adding more
- When just about combined take the bowl off the stand mixer and gently finish mixing with a spatula
- Pour the batter into a greased loaf tin
- Bake for 40 minutes
- Remove from the oven and cover with tin foil before baking for 10 more minutes
- Remove from the oven when a fork inserted into the center comes out clean
- Once the cake is cooled completely make the glaze- whisk together the powdered sugar, coconut oil, oat milk, and 1 teaspoon of maple syrup and glaze forms
- Pour over the cake and use a paint brush to coat the sides of the cake with the glaze that seeps to the plate
- Serve with tea!
