Caramel Apple Cake

Celebrate the end of September with this healthier Caramel Apple Cake!

This is a cake you can eat guilt free for breakfast or as a lighter sweet treat after a heavier fall meal! Enjoy!

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons melted plant based butter
  • 2 eggs
  • 1/2 cup Chobani Caramel Macchiato Dairy Free Creamer
  • 1/2 cup almond milk (or a full cup if you are not using Chobani Caramel Macchiato Dairy Free Creamer)
  • 1/4 cup maple syrup
  • 1 teaspoon almond extract
  • 1/2 cup apple sauce
  • 1/2 cup salted caramel chips or caramel candy
  • 2 apples roughly peeled and chopped into small cubes

Method

  1. In a small bowl whisk together the whole wheat flour, baking soda, and salt
  2. In a separate, larger bowl whisk together the plant based butter, eggs, creamer (if using), almond milk, maple syrup, and almond extract
  3. Once fully combined whisk in the apple sauce
  4. Once the apple sauce is combined whisk in the dry ingredients until combined
  5. Fold in the apple cubes and caramel chips with a spatula
  6. Pour into a 9×9 square baking tin greased and lined with parchment paper
  7. Top with more apple cubes and caramel chips
  8. Bake for 50-55 minutes until a fork inserted has only a few moist crumbs
