Celebrate the end of September with this healthier Caramel Apple Cake!
This is a cake you can eat guilt free for breakfast or as a lighter sweet treat after a heavier fall meal! Enjoy!

Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons melted plant based butter
- 2 eggs
- 1/2 cup Chobani Caramel Macchiato Dairy Free Creamer
- 1/2 cup almond milk (or a full cup if you are not using Chobani Caramel Macchiato Dairy Free Creamer)
- 1/4 cup maple syrup
- 1 teaspoon almond extract
- 1/2 cup apple sauce
- 1/2 cup salted caramel chips or caramel candy
- 2 apples roughly peeled and chopped into small cubes
Method
- In a small bowl whisk together the whole wheat flour, baking soda, and salt
- In a separate, larger bowl whisk together the plant based butter, eggs, creamer (if using), almond milk, maple syrup, and almond extract
- Once fully combined whisk in the apple sauce
- Once the apple sauce is combined whisk in the dry ingredients until combined
- Fold in the apple cubes and caramel chips with a spatula
- Pour into a 9×9 square baking tin greased and lined with parchment paper
- Top with more apple cubes and caramel chips
- Bake for 50-55 minutes until a fork inserted has only a few moist crumbs
