S’mores Cookies

Celebrate the end of summer with these large s’mores cookies! These are festive and dare I say a bit easier than lighting a fire and going through the whole roasting process? Enjoy!

Ingredients

  • 1 cup sugar
  • 2 cups flour
  • 1 egg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup room temperature butter
  • 1/2 cup marshmallows
  • 1 cup crushed graham crackers
  • 1/2 cup chocolate chunks

Method

  1. Heat oven to 375 degrees
  2. In a bowl whisk together dry ingredients (salt, flour, baking soda, baking powder)
  3. In a stand mixer with a paddle attachment combine the butter and the sugar
  4. Add the vanilla extract, maple syrup, and egg to the stand mixer and mix on low until combined
  5. Gradually add the dry ingredients into the stand mixer mixing on low until just combined
  6. Pour in the crushed graham crackers and mix on low until combined
  7. Use a spatula to combine the marshmallows and chocolate chunks into the batter
  8. Use a spoon to scoop the batter, make each cookie two spoonfuls
  9. Roll the two spoonfuls into a ball and flatten the ball slightly on your baking tray lined with parchment paper (I recommend trying to keep the marshmallows away from the edges of the cookie)
  10. Make sure you have plenty of space between the cookies on the pan (I bake in batches)
  11. Bake for ten minutes and then bang and rotate the pan
  12. Bake for 2-3 more minutes
  13. Let cool completely before eating
