Celebrate the end of summer with these large s’mores cookies! These are festive and dare I say a bit easier than lighting a fire and going through the whole roasting process? Enjoy!
Ingredients
- 1 cup sugar
- 2 cups flour
- 1 egg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup room temperature butter
- 1/2 cup marshmallows
- 1 cup crushed graham crackers
- 1/2 cup chocolate chunks
Method
- Heat oven to 375 degrees
- In a bowl whisk together dry ingredients (salt, flour, baking soda, baking powder)
- In a stand mixer with a paddle attachment combine the butter and the sugar
- Add the vanilla extract, maple syrup, and egg to the stand mixer and mix on low until combined
- Gradually add the dry ingredients into the stand mixer mixing on low until just combined
- Pour in the crushed graham crackers and mix on low until combined
- Use a spatula to combine the marshmallows and chocolate chunks into the batter
- Use a spoon to scoop the batter, make each cookie two spoonfuls
- Roll the two spoonfuls into a ball and flatten the ball slightly on your baking tray lined with parchment paper (I recommend trying to keep the marshmallows away from the edges of the cookie)
- Make sure you have plenty of space between the cookies on the pan (I bake in batches)
- Bake for ten minutes and then bang and rotate the pan
- Bake for 2-3 more minutes
- Let cool completely before eating
