Banana and Oat Chocolate Chip Muffins

I love banana muffins. I’m the type of person who buys bananas and then intentionally lets them begin to brown just so I can use them in my baked goods. If you have some browning bananas or just love bananas this recipe is for you! Classic banana muffins with a twist of added oats! This is a healthier & yummy breakfast option!

Ingredients

  • 1 1/4 cups whole wheat pastry flour
  • 1/2 cup old fashioned oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons melted plant based butter
  • 2 eggs
  • 1 cup almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3 mashed bananas
  • 1/2 cup chocolate chips

Method

  1. Heat oven to 350 degrees
  2. Combine dry ingredients (flour, oats, baking soda, salt) in a bowl
  3. In a separate bowl whisk together the wet ingredients (almond milk, eggs, butter, maple syrup, vanilla extract)
  4. Once combined whisk in the mashed banana to the wet ingredients
  5. Pour the wet ingredients over the dry and whisk together until just combined
  6. Fold in the chocolate chips with a spatula
  7. Divide the batter into a muffin pan lined with silicone muffin liners (you will fill all the way to the top)
  8. Bake for 20-25 minutes
  9. Let cool before enjoying
