I love banana muffins. I’m the type of person who buys bananas and then intentionally lets them begin to brown just so I can use them in my baked goods. If you have some browning bananas or just love bananas this recipe is for you! Classic banana muffins with a twist of added oats! This is a healthier & yummy breakfast option!
Ingredients
- 1 1/4 cups whole wheat pastry flour
- 1/2 cup old fashioned oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons melted plant based butter
- 2 eggs
- 1 cup almond milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 3 mashed bananas
- 1/2 cup chocolate chips
Method
- Heat oven to 350 degrees
- Combine dry ingredients (flour, oats, baking soda, salt) in a bowl
- In a separate bowl whisk together the wet ingredients (almond milk, eggs, butter, maple syrup, vanilla extract)
- Once combined whisk in the mashed banana to the wet ingredients
- Pour the wet ingredients over the dry and whisk together until just combined
- Fold in the chocolate chips with a spatula
- Divide the batter into a muffin pan lined with silicone muffin liners (you will fill all the way to the top)
- Bake for 20-25 minutes
- Let cool before enjoying
