To celebrate summer I had to develop a recipe with peaches. My favorite summer treat is warm peaches with cinnamon. I find peaches so pretty I just had to bake this up in a pretty pie pan and dish it up with a pie slicer. You can bake yours in a 9×9 square baking dish and scoop it out or celebrate peaches with a fancy dish like mine.
A note on peeling peaches: I prefer my peaches peeled and have found the easiest way to do this is to toss the peaches into boiling water for 40 seconds and then scoop them out with a slotted spoon and drop them into ice water to stop the cooking. Then I take a knife and slit the skin and use my fingers to peel it off. This blanching process helps the skin come off super easily!
Ingredients
- 3 cups of old fashioned oats
- 1 tablespoon baking powder
- 1 tablespoon vanilla protein powder
- 1 tablespoon chia seeds
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/4 cup maple syrup
- 1 1/2 cups almond milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup white chocolate chips plus more for topping
- 2-3 peaches (peeled and sliced)
Method
- Heat oven to 375 degrees
- Combine dry ingredients in a bowl (oats, baking powder, vanilla protein powder, chia seeds. cinnamon, salt)
- In a separate bowl whisk together the wet ingredients (almond milk, maple syrup, eggs, vanilla extract)
- Pour wet ingredients into dry and combine
- Mix in the white chocolate chips and sliced peaches
- Pour into a greased 9×9 inch square baking pan or 9 inch pie dish
- Top with a sprinkle of white chocolate chips
- Bake for 30 minutes
- Let cool before enjoying
