If you can’t tell I really like putting bananas in my cookies… I have a few recipes for cookies that include bananas including my Cocoa Peanut Butter Banana Cookies and my all time favorite Brown Sugar Banana Caramel Cookies. These are an extra chocolatey banana cookie. When you bite into them they are unquestionably chocolate followed by a wave of banana and ending with the taste of coconut. They are tropical with the comforts of chocolate- the perfect summer treat!

Ingredients
- 1 1/2 cups brown sugar
- 2 1/2 plus 2 tablespoons of flour
- 1 egg
- 1/4 cup cocoa powder
- 1 bar unsweetened bakers chocolate
- 1 teaspoon vanilla extract
- 1 mashed banana
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup butter
- 2 tablespoons coconut oil
- 1/2 cup coconut flakes plus more for sprinkling
- 1/2 cup chocolate chips
- 1/4 teaspoon salt
Method
- Heat the oven to 375 degrees
- In a bowl whisk together the flour, salt, baking powder, and baking soda
- In a stand mixer fitted with a paddle cream together the butter and brown sugar
- Once combined add in the egg, mashed banana, and vanilla extract to the stand mixer
- In a microwave safe bowl break up the bakers chocolate bar and add in the coconut oil
- Microwave in 30 second intervals until melted
- Add the cocoa powder to the melted chocolate and whisk with a fork
- Add this mixture to the stand mixture and combine
- Gradually add the flour mixture to the stand mixer
- Once completely combined use a spatula to mix in the chocolate chips and coconut flakes
- OPTIONAL STEP let the batter sit for 10-20 minutes (this makes it easier to scoop)
- Scoop your cookies (two tablespoon sized) onto baking pans lined with parchment paper (I bake one pan in the middle of the oven at a time)
- Bake for 8 minutes and then take the pan out and sprinkle the cookies with coconut flakes before baking for 3 more minutes
- Let cool completely before eating
