I added raspberry preserves to my sugar cookie recipe to create a summery sugar cookie perfect to whip up for company or bring to friends when visiting.
These cookies can be made two ways. The first way involves scooping out the dough in portions, flattening each potion, dabbing on a teaspoon or preserves, folding over the dough, and then rolling it to create a cookie that you bite into to expose the jam. The second way is easier and quicker- portion out the dough and roll in the preserves to create a swirl affect. Which way will you choose?

Ingredients
- 3/4 cup butter
- 1 1/2 tablespoons olive oil
- 1 cup sugar
- 1 egg
- 1/2 tablespoon vanilla
- 2 cups flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- turbinado sugar for sprinkling
- raspberry preserves
Method
- Preheat the oven to 350 degrees
- In a bowl whisk together the dry ingredients (flour, salt, baking powder, baking soda)
- In a stand mixer fitted with a paddle attachment cream together the butter and the sugar
- Once completely combined mix in the olive oil
- Once combined mix in the egg and vanilla
- Gradually add in the dry ingredients until the cookie dough forms
- Wrap the dough in plastic wrap and let chill in the fridge for 10 minutes
- Once chilled unwrap dough on a floured surface.
- Scoop a two tablespoon sized dough ball, pat it flat, tab 1 teaspoon of raspberry preserves in the middle, pull the sides of the dough over the preserves and roll the dough into a ball before flattening slightly on a baking tray lined with parchment paper. Repeat until all of the cookies are on the trays. OR Scoop a two tablespoon sized dough ball and tap a teaspoon of raspberry preserves on top, use your hands to mix the preserves into the dough until it looks swirled and roll into a ball before flattening slightly on a baking tray lined with parchment paper. Repeat until all the cookies are on the trays.
- Sprinkle turbinado sugar over the cookies.
- Place the trays of cookies in the fridge for ten minutes before baking for 11-13 minutes.
- Let cool before enjoying
