Lavender, Lemon, and Honey Cookies

These cookies are slightly similar to my Blueberry Honey Lemon Cookies. I swap honey for sugar in both of these cookies which results in a fluffier, almost muffin-like, consistency.

I use lavender powder and lemon to make these cookies light and fresh tasting. Mixing in white chocolate chips at the end give the cookies an added sweetness. You can find the lavender powder I use here:

These are the perfect cookies to make for a brunch or even a baby/bridal shower! Or if you do not have an event coming up they are great to snack on any time of day when you are craving something sweet!

Ingredients

  • 3/4 cup honey
  • 2 3/4 cups flour
  • 1 egg
  • 1 teaspoon vanilla extract
  • lemon zest from one lemon
  • lemon juice from one lemon
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup of butter
  • 1 teaspoon lavender powder
  • 1 cup of white chocolate chips

Method

  1. Preheat the oven to 375 degrees
  2. Whisk together flour, baking soda, baking powder, and lavender powder
  3. In a stand mixer beat together honey and room temperature butter
  4. Beat in lemon zest and juice (the mixture will not completely come together at this point and that is okay, just stick with it!)
  5. Beat in the egg and vanilla until semi combined (the mixture is not going to be consistent)
  6. Gradually beat in the dry ingredients
  7. Remove the bowl from the stand mixer and fold in the white chocolate chips
  8. Scoop the cookie dough onto baking sheets lined with parchment paper
  9. Bake for 10-12 minutes
