A note about July 4th:
I know that simply baking in my kitchen is a luxury I would not have if others had not sacrificed for my freedom. July 4th is not just a day for barbecues and fireworks. It is a day to celebrate our blessings and freedom and recognize those who have made all that we have in this country possible.

This baked oatmeal is the perfect summer breakfast and festive morning treat for the fourth. I have been eating this for the last two weeks non-stop! It is easy and quick to whip up, a great addition to a breakfast spread for guests, and absolutely delicious!
Ingredients
- 3 cups of oats
- 1 tablespoon baking powder
- 1 tablespoon chia seeds
- 2 teaspoons of cinnamon
- 1/2 teaspoon of salt
- 1/4 cup maple syrup
- 1 1/2 cups almond milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup chopped strawberries
- 1/4 cup blueberries
- 1/4 cup white chocolate chips plus more to top
Method
- Preheat oven to 375 degrees and spray a 9×9 pan with cooking spray
- In a bowl mix together the oats, baking powder, chia seeds, cinnamon, and salt
- In a separate bowl whisk the eggs, almond milk, maple syrup, and vanilla extract until complete combined
- Pour wet mixture over dry and mix together with a spatula
- Fold in strawberries, white chocolate chips, and blueberries
- Spread mixture into the baking pan and top with more white chocolate chips
- Bake for 30 minutes
