Cocoa Peanut Butter Banana Cookies

Ahh the classic combination of peanut butter and banana- timeless but new as a cookie with the addition of cocoa powder for an added richness. These cookies remind me of a banana bread but in sweet treat form.

Ingredients

  • 1 1/2 cups sugar
  • 2 2/4 cups + 2 tablespoons of flour
  • 1 egg
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 2 mashed bananas
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup butter
  • 1 cup chocolate chunks
  • 1/4 teaspoon salt
  • 3 tablespoons peanut butter

Method

  1. Preheat the oven to 375 degrees
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl
  3. Cream together butter and sugar in a stand mixer
  4. To the stand mixer add the cocoa powder and mix until combined
  5. To the stand mixer add the egg and vanilla and mix until combined
  6. To the stand mixer add the mashed banana and the peanut butter and mix until combined
  7. Gradually mix in the dry ingredients (flour, baking, soda, and salt) to the wet ingredients in the stand mixer
  8. Gently fold in the chocolate chunks
  9. Scoop the cookies onto multiple sheet pans lined with parchment paper to bake in batches
  10. Bake for 8 minutes and then take take the pan out, bang, and rotate and then bake for 3 more minutes
  11. Repeat until all of the pans of cookies are baked
  12. Let cool before eating
