Continuing with yesterday’s picnic theme is today’s recipe- this is a sandwich that I get requested to make often and one that I bring on my husband and I’s picnic dates regularly! It involves some of the best things you can get in the deli section – mozzarella and prosciutto.
This is a must make and a must eat!

Ingredients
- 1 pint of cherry tomatoes
- 1/4 cup olive oil
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1 clove of garlic minced
- 1/2 teaspoon pepper
- French bread baguette (will make two large sandwiches)
- 1/4 cup pesto
- Mozzarella
- Shaved prosciutto
Method
- Halve cherry tomatoes and marinate in olive oil, garlic, red pepper flakes, salt, and pepper
- Slice bread in half down the middle and then in half to form sandwich pieces
- Spread pesto on each slice
- Top with fresh mozzarella, prosciutto, and the cherry tomatoes
- Press in sandwich press until the top is crusty and the cheese has melted
