Pressed Pesto Picnic Sandwich

Continuing with yesterday’s picnic theme is today’s recipe- this is a sandwich that I get requested to make often and one that I bring on my husband and I’s picnic dates regularly! It involves some of the best things you can get in the deli section – mozzarella and prosciutto.

This is a must make and a must eat!

Ingredients

  • 1 pint of cherry tomatoes
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 clove of garlic minced
  • 1/2 teaspoon pepper
  • French bread baguette (will make two large sandwiches)
  • 1/4 cup pesto
  • Mozzarella
  • Shaved prosciutto

Method

  1. Halve cherry tomatoes and marinate in olive oil, garlic, red pepper flakes, salt, and pepper
  2. Slice bread in half down the middle and then in half to form sandwich pieces
  3. Spread pesto on each slice
  4. Top with fresh mozzarella, prosciutto, and the cherry tomatoes
  5. Press in sandwich press until the top is crusty and the cheese has melted
Picnic tip: wrap the sandwiches in aluminum foil after pressing to keep warm while you head to your picnic!
