Food satisfies more than one need. It’s sustenance, yes, but it’s also community. It’s what gathers us together after a long day of work, how we mark momentous occasions, how we socialize, our days revolve around our meals. My favorite meals are spent with others. I love filling my need for community with food.
For my birthday this year we gathered as a community for a picnic. Each dish that was brought forward was truly a labor of love and the group gathered together made it even more special. It’s moments like that picnic or a meal around the table that I feel strongest, I know I can sustain myself for what lies ahead because of the community I have next to me and across from me.

This sandwich was one of my contributions to the picnic. I hope you try it out and make it for your community sometime soon!
Ingredients
- Sourdough bread slices
- 1 cup Ricotta cheese
- 1 Tablespoon olive oil
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Juice of 1 lemon
- 2 cups of arugula
- Shredded rotisserie chicken
- Jar of roasted red peppers
Method
- Begin by toasting your sourdough bread slices
- Mix ricotta with olive oil, red pepper flakes, salt, and pepper
- Squeeze the lemon juice over the arugula and toss
- Spread marinated ricotta on each slice of bread
- Top with chicken, a couple red pepper slices and a handful of arugula
